Homemade Granola Bars!

Mmmm... I decided to try another new recipe.  In an effort to cut back on all the processed stuff in preparation for the milestone that is quickly approaching (check you later 20's!!!)  Anyway, this is what I found, super yummy, homemade granola bars thanks to My Baking Addiction!  I cannot stop eating them!

Homemade Granola Bars-

Yield: 24 Servings

Ingredients:
2 cups of rolled oats
1/2 cup of packed brown sugar
1/2 cup of flax seed
3/4 teaspoon of ground cinnamon
1 cup whole-wheat, all-purpose flour
1/2 teaspoon of salt
1/2 cup of honey
1 egg lightly beaten
1/2 cup of vegetable oil (I am going to substitute pumpkin puree or apple sauce next time)
1 teaspoons of vanilla
3/4 cup of slivered almonds
1/2 cup of raisins
1/2 cup of dried cranberries
1/2 cup of raw pumpkin seeds
1/2 cup of dark chocolate chips

Directions:
1. Preheat oven to 350 degrees F. Line a 9X13 pan with parchment paper (note to self...use parchment not wax!)
2. In a large bowl, mix together the oats, brown sugar, flax seeds, cinnamon, flour, and salt.  Make a well in the center, and pour the honey, egg, oil and vanilla.
3. Mix well using your hands (or a spoon), add dried fruit, chocolate chips, almonds and pumpkin seeds.  Pat the mixture into the prepared pan.
4. Bake for 30 minutes in the preheated oven, until the bars begin to turn golden around the edges.  Cool on a wire rack for about 30 minutes before cutting.  Do not allow the bars to cool completely before cutting because they will crumble.
